It's a non-specific, cysteine protease (28 kD) from Ananas comosas, most
active in slightly alkaline solutions (pH 8 - 8.5).

A recent proteolytic enzymes addition of "Methods in Enzymology"
gives good general information about pineapple stem proteases, but
I don't have the reference to hand
